Fresh Apple Cake with Caramel Sauce


Cake

4 cups finely chopped apples (using a sweeter apple helps keep the additional sugar lower)
2 eggs
2 cups sugar 
( this is the amount from the original recipe, but I use 1/2 cup white and 1/2 coconut sugar only because we do not like really sweet foods)
2 teaspoons cinnamon
1/2 cup coconut oil
1/2 cut nuts (I used pecans finely chopped)
2 cups flour
1 teaspoon salt
2 teaspoons baking soda


Caramel Sauce

1/2 brown sugar
1/2 cup whipping cream 
(I used regular milk and it worked fine even though it made a thinner sauce)
1 stick butter
1 tablespoon flour
1 teaspoon vanilla

1. Preheat oven to 350 degrees F. Grease 9" x 13" pan.


2. Place apples in a large mixing bowl. Break eggs over apples, and stir. Add the two 1 cup of sugar, and stir. Add the cinnamon, oil, and nuts, and stir to combine. Sift the flour, salt, and baking soda into the bowl of other ingredients, and mix well.


3. Pour the batter into the prepared pan, and bake for 45 minutes.


4. When the cake is done baking and has cooled a while, place the brown sugar, cream or milk, butter, flour, and vanilla into a saucepan and bring to a boil over medium heat. Boil for one or two minutes and pour warm over the cake. I will poke a few holes in the cake which allows some of the sauce to get into the cake. 

This is a rich and delicious tasting cake and your family is sure to want another small piece.
