This Week In My Kitchen



Hello girlfriends! 
I am joining Heather, over at Beauty That Moves for This Week In My Kitchen blog hop! Stop by, it is a nice way to be inspired in your kitchen!

The highlight of this week was:

Sweet Potato Fries with Limey Dipping Sauce and Spiced Salt




Sweet Potato Fries
Preheat oven to 450
cut sweet potatoes crosswise on a slight diagonal (into sticks)
put the sticks in the 1/4 cup olive oil, coat them well, then spread out in one layer on a baking sheet
roast for 20 min. give or take, stir around, let them roast til browned (watch them towards the end)
while they are browning you can make your dipping sauce 
(these are wonderful without sauce, but the combination is very, very good)

Limey Dipping Sauce
1/3 cup mayo
1/2 grated lime zest
1 TBSP lime juice
1/2 tsp. minced garlic
teeny pinch of sea salt

let mixture sit to marry together for 10-15 minutes

now, if you really want a treat, you can make a special spiced salt and sprinkle this on after baking and before dipping...actually you can have them alone, with the sauce and spice or with either one alone

Spicy Salt
pinch of sea salt
1/2 tsp.sugar
1/4 tsp. cumin
1/4 tsp. cinnamon
1/4 tsp. coriander
1/4 tsp. paprika
